Believe me this recipe is a keeper and is the perfect thing to make for mother's day which is right around the corner. This taste like a delicious pound cake but without all the fuss of creaming together the butter and the sugar, ahhh! sooo good.
I sprinkle it with a little turbinado sugar before baking to give it that sparkly look and beautiful finish in the end.
I like to serve this with some whipped cream and strawberry coulis on the side.
INGREDIENTS THAT YOU NEED TO MAKE THIS BEAUTY
WHOLE WHEAT FLOUR
ANY FLAVORLESS OIL LIKE REFINED COCONUT OIL OR SUNFLOWER OIL
UNREFINED POWDERED SUGAR
TURBINADO SUGAR WHICH IS OPTIONAL
HOW TO MAKE VEGAN BUTTERMILK?
you can make vegan buttermilk by simply combining 1cup soy milk with 1tbsp white vinegar, just leave this mixture for 15 minutes and you are good to go.

RECIPE OF VEGAN STRAWBERRY ORANGE CAKE
1/2cup soy milk
1/2tbsp white vinegar
1/2 1/4 cup wholewheat flour
1/2tsp baking powder
6tbsp unrefined powdered sugar
1/4cup sunflower oil
1/2tsp vanilla extract
2-3tbsp of soy milk
1tbsp of turbinado sugar
5-7 strawberries or as needed
preheat oven to 180c and mix your 1/2cup of soy milk with vinegar and set aside for 15 minutes.
In a large bowl whisk together the powdered sugar and oil for about a minute.
whisk in the buttermilk mixture and vanilla extract.
zest your orange over the mixture and whisk to combine.
sift the whole wheat flour and baking powder .
add your soy milk.
fold everything with the help of a spatula until well combined.
transfer this batter in a greased 7inch springform tart pan.
arrange your sliced strawberries on top and sprinkle with turbinado sugar.
bake for about 12-15 minutes or until a toothpick inserted in the center comes out clean.
serve with strawberry coulis and whipped cream on the side, ENJOY!!
