BUA LOI (THAI FLOATING LOTUS DESSERT)

WHAT IS BUA LOI?

Bua loy is a thai dessert which is naturally gluten free and vegan, The simmering coconut milk with the pandan lends an amazing aroma that is unlike anything else.

WHY THE NAME BUA LOY?

Bua means lotus and loy means floating, perhaps the name is due the fact that the balls u see here are the size of 'lotus' seeds which are than boiled in hot water until they 'float' to the top.


WHAT U WILL NEED FOR THIS DESSERT?

This dessert is composed of two elements that are super simple to do, the first one is the sweet coconut 'soup' and the other one are the cute little colorful balls made with sweet glutinous rice flour.


HOW TO COLOUR THE SWEET GLUTINOUS RICE FLOUR BALLS?

you can colour these balls in any colour that you want using any strong coloured fruit juice like grape juice, beet juice or even cranberry juice. some people also add boiled and mashed taro or kabocha squash to the dough.

I think it goes without saying that some people nowadays use food coloring to color their dough.


TEMPERATURE THAT IS PREFFERED FOR SERVING THIS DESSERT?

u can serve this dessert hot or even at room temperature but definitely not cold as the texture of the balls wills not be right.


RECIPE OF BUA LOY

INGREDIENTS


Dough

50g sweet glutinous rice flour

1/4cup boiled and mashed vegetable or any fruit juice

water as needed

sweet coconut milk

1cup full fat coconut milk

1/2 cup water

5-6tbsp of palm sugar ,chopped/regular powdered white sugar

salt, a pinch

pandan leaf (5inch piece)


INSTRUCTIONS

  • For the dough, mix the fruit juice or vegetable puree and the sweet rice flour to make a semi soft dough, add water as needed.

  • roll the dough into balls that are about the size of a lotus seed, maybe a little smaller.

  • set aside covered with a kitchen cloth to prevent it from drying.

  • boil lots of water to boil your sweet rice balls.

  • drop the balls in boiling water and cook until they float to the top of the water surface ,don't overcrowd the pot.

  • put all the balls in a bowl of ice water and set aside while u make your sweet coconut milk.

  • For the sweet coconut milk , simmer all the ingredients for about 10mins and than add your sweet glutinous rice balls.

  • let this sit for about 20mins and serve hot, enjoy.
