GLUTEN FREE LIME OATMEAL PANCAKES


Are you a fan of those fluffy cloud like stack of pancakes that you can only get at your favorite café ?

I know you are but what if I told you that these oatmeal pancakes are even better because they are vegan , gluten free and on top of that they are made with wholesome ingredients like oats and applesauce but still they are light as a cloud.

you can enjoy them for breakfast daily without having to feel the guilt of like eating a pound of butter that you might have at your favorite coffee shop.

I like to serve them with coconut yogurt and some fresh strawberries . The fresh strawberries go particularly well with these lime flavored pancakes. I would recommend batch making them in the weekend and just reheat them in the microwave if you are pressed for time in the mornings, I mean nothing beats freshly made stack of hot fluffy pancakes but it is much better to have these reheated instead of skipping breaky!


WHAT YOU WILL NEED TO MAKE THESE FLULLFY CLOUD OF HEAVEN?


ROLLED OATS I like to use old fashioned rolled oats for this recipe which will be blended into some amazing homemade oat flour. you can use quick cooking oats but the texture will be a little different.


SOY MILK You can use your favorite brand of unsweetened soy milk for this recipe.


APPLESAUCE You can use homemade or store-bought applesauce for this recipe.


MAPLE SYRUP This will be the sweetener for this recipe, you can use agave syrup as well. make sure you use pure maple syrup and not pancake syrup because they are not the same thing.


MELTED COCONUT OIL Use refined coconut oil in this recipe, so that you don't get any unwanted flavor of coconut in your final stack of pancakes.


BAKING POWDER This will be the raising agent for this recipe.


VANILLA Becoz I love vanilla!


LIMES After all these are lime flavored pancakes....you need to zest them into the batter.


FRESH STRAWBERRIES AND COCONUT YOGURT For serving....Ahh! I can't wait for you guys to try this recipe.


RECIPE OF GLUTEN FREE LIME OATMEAL PANCAKES

SERVES:1 (4 pancakes)

TOTAL TIME:30MINUTES


INGREDIENTS


1cup rolled oats or 81g

1/2cup unsweetened soy milk

2 1/2tbsp+1/2tsp applesauce

1tbsp maple syrup

11/2ttsp coconut oil and extra for frying

1/2tsp baking powder

zest of 1 lime


INSTRUCTIONS

  • In a food processor or a blender, blend the oats into a powder and sieve them into a large bowl.

  • add all the other ingredients to the bowl and whisk well.

  • preheat a nonstick skillet over medium low heat with a little coconut oil.

  • when hot, spoon 1/4cup of batter onto the skillet and flip it once you see the batter has bubbles on top or has dried out.

  • cook for 1to 2 minutes on each side.

  • Make a huge stack of these little clouds of heaven and top with fresh berries and some coconut yogurt, ENJOY!
