have for lunch with some toasted baguette on the side.

This soup doesn't taste like you are eating a ton of carrots and it is perfect for kids and picky adults alike. It only contains 4ingredients excluding salt, water and oil of course.


This soup is the perfect thing for those cold chilly days when u don't feel like doing anything or for those days when u want something quick for dinner, this soup comes together under 30mins.

RECIPIE FOR CARROT SOUP


INGREDIENTS

4 medium orange carrots, grated

1/2cup coconut milk

1cup water

1tsp coriander powder

1/2tsp cumin powder

salt as per taste


INSTRUCTIONS

  • Heat some oil in a heavy bottom pot and add your ground spices and let them toast for 30secs.

  • add the grated carrot , salt and sauté for 5mins.

  • add your coconut milk and water, bring to a simmer.

  • cook this on medium low until carrots are tender.

  • blend the soup and serve warm.
