VEGAN PEA AND THYME SOUP


Don't u love a dinner that only takes 20mins on the stove which is both healthy and

filling ?

In my opinion it is way easier than those takeout meals which will really burn your wallets empty.

This soup is packed full of nutrition from those peas and is full of antioxidants from the thyme, YES herbs can be that powerful.


The soup starts by caramelizing onions and than adding frozen peas ,dried thyme, salt, pepper and vegetable stock to the pot and finally blending it all together,

EASY RIGHT!!!


You can garnish this soup with some croutons which are flavored with mixed dried herbs and a drizzle of extra virgin olive oil if that's your thing but honestly this soup is so warm and comforting that it doesn't need any garnishes at all.

RECIPE OF VEGAN PEA AND THYME SOUP


INGREDIENTS

3/4Cup frozen peas

1/2 tbsp vegetable oil

1 small white or yellow onion, chopped

1 1/2 cup vegetable stock

1tsp dried thyme

salt and pepper as per taste

extra virgin olive oil and croutons (optional)


INSTRUCTIONS

  • Start by heating some oil in a heavy bottom pot ,than add the onions and cook until lightly brown.

  • add your frozen peas, veg stock, salt and pepper, and thyme all at the same time to the pot and bring to a boil.

  • let it simmer for 20mins on low heat.

  • blend it using an immersion blender or u can use a jug blender if that is what u have.

  • reheat the soup and serve warm with some croutons and a drizzle of light olive oil.
