VEGAN TAQUITOS WITH TOFU FILLING


If you love mexican food but it is full of cheese and you want a vegan alternative to all your mexican cravings than you have come to the right place.

These taquitos are so delicious

without all the oil and calories of regular deep fried taquitos.

WHAT ARE TAQUITOS?

Taquitos are basically a tortilla that is rolled with a tomato sauce based filling which is full of cheese and all those mexican spices like cumin and coriander and than deep fried, it is generally served with lots of sour cream, salsa, quesco fresco and of course jalepenos.


HOW CAN THEY BE TURNED VEGAN?

they can be easily turned vegan and healthy without compromising that lip smacking taste that we all know and love.


FOR THE FILLING we will be using tofu along with some tomato sauce, lots of coriander, cumin powder, cayenne pepper, coriander powder and an absolute must have ingredient is nutritional yeast powder that takes these taquitos to the next level and replaces all the cheese with its super umami flavour.


FOR THE FRIED TORTILLA ''SHELL'' we will be making a super simple dough out of all purpose flour,salt, oil, baking powder and hot water. these tortillas will be baked in a very hot oven with just a tablespoon of oil; they turn out super crispy trust me.


FOR THE SIDE CONDIMENTS we will be having a super fresh salsa made with chopped tomatoes, onions, coriander, ketchup and lots of freshly squeezed lime juice.

for the sour cream we will be using some soy yogurt or u can use any vegan yogurt of your juice,if your yogurt is too watery just put it in a muslin cloth and let it hang for several hours on your tap.

for some heat u got to have some jalepenos which are my true love.

RECIPE OF VEGAN TAQUITOS WITH TOFU FILLING


INGREDIENTS


FOR THE TORTILLA

MAKES 6

11/2 cup plain flour

1/2 1/4tsp baking powder

1tbsp veg oil

salt, a pinch

about 1/2cup hot water


FOR THE TOFU FILLING

3/4 cup crumbled firm tofu,drained

3tbsp nutritional yeast flakes or powder

6tbsp fresh tomato puree

2tbsp tomato paste

1/3 cup chopped coriander

2tsp cumin powder

2tsp coriander powder

3tsp oregano

salt

2tsp chilli powder or cayenne pepper

1tbsp veg oil

1 small onion, chopped

1jalepeno,chopped


FOR THE SOUR CREAM

1/4cup soy yogurt

juice of half a lime

salt, as per taste


FOR THE SALSA

1 small onion , finely diced

2 small tomatoes,finely diced

1/2 jalepeno ,deseeded and finely chopped

juice of half a lime

salt

2tsp ketchup or as per taste


INSTRUCTIONS


FOR THE TORTILLA

  • In a bowl take all your dry ingredients and add your oil.

  • rub the oil into the dry mix with your finger tips to create a coarse sand like consistency.

  • add your hot water and knead for about 5 to 7 mins until a smooth ball of dough forms.

  • roll into 6 balls and rest for 30mins.

  • roll each ball into a tortilla and preheat a dry skillet over medium heat.

  • cook your tortilla for about 2 mins on each side.

  • rest covered with a kitchen cloth in a basket.

FOR THE TOFU FILLING


  • In a pan heat some oil on low heat and add your onions.

  • saute until translucent, add all your spices and let them sizzle in the oil for about 20secs.

  • add your tomato paste and cook until the oil starts coming out of the paste.

  • add your salt, tomato puree, jalepenos and cook until slightly reduced .

  • add your tofu and nutritional yeast.

  • cook for 5mins covered.

  • take it off the flame and add your coriander.

  • let it cool completely.

FOR THE SALSA

  • mix everything together and set aside.

FOR THE SOUR CREAM

  • mix everything together.

FOR THE ASSEMBLY

  • preheat the oven to 200C

  • add about 3tbsp of filling in each tortilla depending on its size and roll it into a log shape.

  • repeat with all the tortillas and put them in a greased tray with the seam side down.

  • brush with oil and bake for about 15 to 20 mins or until golden brown and crispy.

  • drizzle with sour cream and sprinkles fresh coriander on top.

  • serve with salsa and jalepenos , enjoy.
